“BIANCO BARRICATO” is a similar condiment to the “BIANCO” except that it undergoes a longer (oak, cherry and mulberry) wood barrel maturation process which makes it thicker, slightly darker and more aromatic.

This condiment is particularly suited to use with salad dressings without (unlike balsamic vinegar) darkening the dressing itself. Some use it on ice-cream, panna cotta and other dessert dishes.
